Check this out. It's a game where 4 people take on a 5th player, who is a giant evolving monster.

I think you're exaggerating just a tad. the game will do fine. It's easy enough to have one of the leftover humans automatically get switched into the monster role. It's not a complicated game, and it will definitely fit into a niche that isn't overly-crowded.

Perhaps you haven't played low-player team games like L4D in competitive modes, so let me tell you: people behave a LOT worse than you think they do. Just the shit talking in the lobby will instantly remove 90% of the people who would otherwise consider playing a game like that.

Also, about 90% of the games which were started in VS mode that I've played on L4D 1 or 2 have ended either with completely different players on one side (cycling) or with 4 players playing against bots. Most of the 10% came from playing with a proficient groups, i.e. the equivalent of "gathers."

The human race is pretty shitty, a lot more so online.
 
Left 4 Dead 2 is currently the 14th most popular Steam game. It's almost 5 years old now. These kinds of games do just fine.
 
It's only the 14th most popular Steam game because Valve's balls have sweat on it... and most people play campaign or coop with friends from my observation.
 
New video. And apparently these are the same guys who made Left 4 Dead. So I guess Valve's ball sweat must be on it after all.

 
game looks fun once you find a solid group....omg the endless hours! of good times. fuck the trailer should have just used danzig instead of that cover
 
Honestly, I had a lot of fun back in the day with Left4Dead and Left4Dead 2. Evolve could be pretty fun.
