Took he week off so figured I'd start the week off by smoking some pork roast. More pics in about 6 to 8 hours lol
 
Pulling them out to wrap now then back on for 2 hrs

It got a little hot but i use a lot of brown sugar and Cayanne pepper in my dry rub because like mac said I like a good bark the brown sugar tends to get dark

does look delicious. I smoke a lot. i never have been a big fan of the brown sugar though. I know a lot of people who swear by it.
 
good looking stuff. @balls2dawall how do you do your tri tip?
Tri-Tips already come marinaded;but, I do add some season salt, white pepper, black pepper, and a little garlic. Mesquite wood and charcoal really bring out the flavor. I mix in wood with the charcoal and let it roll for a while and it comes out real tasty. I throw some wet chunks of wood to get the smoke rolling.
